Kale is for Kalcium!


Kale is an excellent source of Calcium. Try to incorporate more Kale into your meals this week. If you have a dairy-free diet Kale is an excellent way to get in that Calcium that your body needs. Try this recipe I created below!

This month I created a Kale salad. Kale is an excellent source of Iron, Calcium, and Vitamin C. A cup a day will keep the surgeon away! Try this recipe and add some nutritional goodness to your day!

4 Kale leaves
1 Large Onion (Purple)
2 Cloves of Garlic
1 Tbs Tamari
1 Tsp Balsamic Vinegar
1 Tbs Sesame Oil (any oil will do)

Chop onions into half moon shape. Chop Kale leaves into 1 inch pieces omit the stem. Saute the onions on medium heat for 15 minutes or until tender and sweet. Add Tamari. Add water as needed to prevent burning. Put Kale on top of Onions with enough water to cover the bottom of the pan. Put a lid on and let sit for minutes. Stir in oil and Balsamic Vinegar. Serve. Feeds 3-4 people.
