If one wasn’t enough here is another favorite recipe that we have tweaked to our liking. And yes we also made this yesterday
Kale, Spicy Sausage, and Sweet Potato Soup:
2 Tbsp Olive Oil
1 Bunch of Kale- Remove stems and tear into small pieces
1 Yellow Onion- Chopped
1 pound spicy italian sausage- Use regular if you don’t like spicy food
8 cups chicken broth
3-4 Sweet Potatoes- cubed
Salt and Pepper
Brown sausage in olive oil. Add onion and cook until translucent. Add sweet potatoes and stir for a few minutes. Add chicken stock and simmer until sweet potatoes are soft (about 20 mins). Add kale and cook for a few minutes (until kale is wilted and bright green, but not soggy). Season to taste with salt and pepper.
